
Recipe of the Month - Darjeeling Tea Bark
Michele LillieTea and chocolate pair beautifully. Chocolate bark is an easy treat to make and adding tea gives unexpected flavor notes. It is also easily personalized with your choice of type of chocolate and tea. With only two ingredients, make them the highest quality possible for the best result.

Ingredients
- 1 pound finely chopped dark chocolate
- 2 Tbsp coarsely ground loose-leaf Darjeeling tea leaves
Directions
Step 1
Line baking sheet with parchment paper or a silicone baking mat.
Step 2
In a bowl set over simmering water, melt the chocolate, stirring frequently. When about ¾ of the chocolate is melted, remove from heat and stir until all remaining chocolate is melted. The chocolate should feel warm to the touch. Stir in tea and mix well.
Step 3
Pour chocolate into prepared pan and spread it evenly. It should be about ⅛-inch thick.
Step 4
Allow to set at room temperature until solid, about 4-6 hours. Once set, break into pieces and store at room temperature in an airtight container.
Make It Your Own
- Use the same amount of chocolate but replace the Darjeeling tea with the suggested amounts shown in the following variations.
- White on White – White chocolate with 4 teaspoons white tea.
- Jasmine White – White chocolate with 2 tablespoons Jasmine tea.
- Milk Chocolate Chai – Milk chocolate with 4 teaspoons Chai tea.
- Lemon Black – Dark chocolate with 2 tablespoons of any black tea and ½ teaspoon lemon zest.
- Earl Grey Black – Dark chocolate with 2 tablespoons Earl Grey tea.
- Holiday Bark – White chocolate with 2 teaspoons matcha and crushed peppermint candies.
- Use two kinds of chocolate and swirl into a pretty pattern on the baking sheet before it cools.
- Make bark with dark or milk chocolate as above. Melt a small amount of white chocolate, put in piping bag and drizzle in a decorative pattern on top.
- Add nuts and/or dried fruit for texture.
