Almond Chai Granola

Whether you like your granola with milk and fresh berries as your breakfast or a delicious snack any time of the day, this recipe is for you. 


The addition of Chai tea makes it extra special and perfect for enjoying with a cup of the same tea.

Ingredients

  • 2 tablespoons loose-leaf chai tea
  • ¼ cup boiling water
  • 3 cups oats
  • 2 cups almonds, coarsely chopped
  • 1 cup sweetened shredded coconut
  • ½ cup honey
  • ¼ cup olive oil
  • ⅓ cup sugar
  • 2 teaspoons vanilla extract
  • ¾ teaspoon salt
  • ¾ teaspoon ground cinnamon
  • ¾ teaspoon ground nutmeg
  • ¼ teaspoon ground cardamom

Directions

Step 1

Preheat oven to 250°F.

Step 2

Steep tea in boiling water 5 minutes.

Step 3

Meanwhile, combine oats, almonds and coconut.

Step 4

Strain tea and discard leaves. Stir remaining ingredients (honey through cardamom) into tea. Pour tea mixture over oat mixture; mix well to coat.

Step 5

Spread evenly in a greased 15x10 inch rimmed baking sheet. Bake until golden brown, stirring every 20 minutes, about 1¼ hours.

Step 6

Cool completely without stirring. Store in an airtight container.
