Apricots are small golden orange fruits with velvety skin and flesh. They are relatives of peaches and although not as juicy they are smooth and sweet, with a flavor somewhere between a peach and a plum.
They are full of beta-carotene, fiber and antioxidents. Although dried and canned apricots are available year-round, fresh apricots with a plentiful supply of vitamin C are in season in North America from May through August.
In the 17th century, English settlers brought the apricot to the English colonies in the New World. Most of modern American production of apricots comes from the seedlings carried to the west coast by Spanish missionaries. The biggest producers in the world are Turkey and Iran and almost all U.S. commercial production is in California.
